Millésimé 2007 Bleu Saphir Red (Santa Ynez Valley)

At the age of nearly six years, this Cabernet Sauvignon-based blend remains deliciously fresh, offering ripe blackberry, cherry, currant, chocolate and oak flavors. It's soft in tannins, which limits ageability, although it's already throwing some sediment. Drink over the next two years.
